Man this recipe was really fun to create.
Some of you may know but I’m very passionate about decreasing food waste so I have a very hard time just throwing away food which is why I often freeze it until I can use!
Well, since I am moving home in a couple weeks I don’t have a super packed pantry but I decided to make with what I had... and WOW.
Y’all, these Breakfast Protein Sweet Potato Banana Oat Bars are BOMB.
I have to add “protein” to the name since these have Greek yogurt, almond butter, and eggs in them which all are amazing sources of protein! Instead of using oil (did not have any) I added those forms of liquid!
Additionally, it’s packed with super nutrients from the sweet potato (Vitamin A-antioxidant), banana (potassium), whole grain oats, and @sperafoods tiger nut flour! *Couldn’t resist drizzling some almond butter dark chocolate to add the perfect touch!*
