Happy Saturday everyone!
I don’t know if it’s just been the cross-country move or with everything that’s going on in the world lately but I’ve been feeling super uninspired and struggling to create content! 😔 Hopefully it’s just a minor slump and I’ll start to get more creative juices flowing in the next few days.
In the meantime, making some really simple, tasty and nutritious plates to share with you!
Omelets are a perfect and super simple way to get your day started (or ended...love me some breakfast for dinner)! Eggs are one of the best and financially savvy forms of protein with healthy fats! Just scramble some up, place em in a hot skillet, add in your favorite fillings (possibilities are endless; I did ham and cheese as that’s my dads favorite, but you can also add in some spinach and onions to add some veggies and flavor), fold over once eggs are cooked mostly through, flip once more, and enjoy!
