

•Bean and Chicken Chili Sweet Potato•
Been rummaging through my parents cupboards and making healthy meals out of whatever they have on hand! This time it was some pre-mixed bean chili that I made and sautéed up some ground chicken to combine with.
Then I made a Japanese sweet potato 🍠 (white flesh on the inside and purple on the outside; SO delicious 😋) and topped it with a scoop of the chili and a dollop of plain Greek yogurt! Can also use a regular russet potato 🥔 (still super nutritious; swipe right). Super tasty, filling and healthy nutritious dinner for the family with leftovers for the next couple days! Protein + carbohydrates = 💪🏻
